240 Days Cabernet Franc
100% Finger Lakes, New York
Refreshing | Velvet | Aromas of Blackberry & Clove
Our inaugural 2015 variety is an elegant and refined example of what a Finger Lakes Cabernet Franc can do. The highly perfumed nose shows aromas of blackberry, clove, and dry herb. The palate is refreshing with soft tannins on the long finish.
Vintage
After a long, rough winter, the vines emerged in early May. Fortunately the frost season was mild and the vineyards of the Finger Lakes were largely spared.
June was one of the wettest on record with 7” of rain falling throughout the month, which slightly hindered fruit set; however, once July came the weather was dry and warm through the early part of fall with only small showers. The fall had the usual pressures of rain; however, our fruit remained clean and healthy for our harvest.

What makes 240 Days Cabernet Franc unique?
The Cabernet Franc was harvested both on October 1, 2015 and October 9, 2015. After a 6 day cold soak the fermentation was started using FX10 yeast. After fermentation, skin contact continued for another two and a half weeks to fully round the palate and refine the tannins.
- Barreled down into a mix of 1/3 new, 1/3 once used, and 1/3 neutral French oak for malolactic fermentation
- Remained in barrels for 14 months prior to bottling
- No fining was used during the production of this wine
